Ingredients

  • 2 cups chopped or sliced pepperoni
  • 4 ounces cream cheese, softened
  • 1/3 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • 3 large eggs, beaten
  • 1 1/4 cups shredded mozzarella

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large mixing bowl, combine the cream cheese, chopped pepperoni, shredded mozzarella cheese, and beaten eggs until completely combined.
  3. Add in the coconut flour, baking powder, minced garlic, and Italian seasoning. Mix until well combined. Chill the mixture in the refrigerator for 10 minutes to allow the flour to absorb the moisture. If after 10 minutes there is still a considerable amount of moisture, chill for another 10 minutes.
  4. Using a small cookie scoop, drop the dough onto a greased baking sheet or a silicone baking mat.
