Ingredients For the cake 2 tbsp lemon juice 2 tbsp double/heavy cream 1½ tbsp powdered sweetener ½ tbsp baking powder 4 tbsp almond flour extra fine 1 egg Ingredients For the glaze 1 tbsp double/heavy cream 1 tbsp unsalted butter 1 tbsp powdered sweetener squeeze of lemon juice
Instructions For The Cake Mix all the dry ingredients - almond flour, sweetener, and baking powder - in a separate bowl.
Add all wet ingredients and mix well with a fork. If you find the dough is too runny, add a little almond flour.
Transfer the mixture to the small bowl and place it on the surface.
Microwave on high for about 90 seconds. You can also bake the cake at 180°C / 360°F for about 15 minutes.
