Ingredients
  

  • 2 cups rolled oats ground into flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup olive oil or melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1 cup grated apple about 1 large apple
  • 1/2 cup raisins or chopped nuts optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  • In a large bowl, whisk together the ground oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together the eggs, oil, honey, and vanilla extract until well combined.
  • Stir the grated carrots, grated apple, and optional raisins or nuts into the wet ingredients mixture.
  • Gradually combine the wet and dry ingredients, stirring just until the mixture is well blended.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
