ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup lump crab meat
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1 tsp Old Bay seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the crab meat, breadcrumbs, mayonnaise, Parmesan cheese, chopped onion, minced garlic, parsley, lemon juice, Old Bay seasoning, salt, and black pepper. Mix until well combined.
  3. Using a sharp knife, carefully cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the crab mixture, securing with toothpicks if necessary.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side, or until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the oven and let it rest for a few minutes before serving.
  8. Serve hot and enjoy your Crab-Stuffed Chicken Breasts!
