BEEF STEW CLASSIC

Ingredients:

  • 2 lbs beef stew meat (chuck roast, cubed)
  • 1 tbsp olive oil
  • 4 carrots, peeled and chopped
  • 3 large potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch + 2 tbsp water (for thickening, optional)

Directions:

Sear the Beef (optional but adds flavor)
In a skillet, heat olive oil over medium-high heat.
Sear beef cubes for 2โ€“3 minutes until browned. Transfer to the slow cooker.

Add the Vegetables
Add carrots, potatoes, onion, and garlic to the slow cooker.

Make the Broth Mixture
In a bowl, whisk together beef broth, tomato paste, thyme, salt, and pepper. Pour over the meat and veggies.

Slow Cook
Cover and cook on LOW for 8 hours or HIGH for 4โ€“5 hours, until beef is tender and veggies are cooked through.

Thicken (optional)
