Ingredients
For pancakes:
- a c of soft unsalted butter
- a c of granulated sugar
- 1 egg
- 1½ t of vanilla extract
- a cup of milk
- ¼ cup sour cream
- 1⅔ cup all-purpose flour
- 1½ t baking powder °
- a teaspoon of bread yeast
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
To decorate:
- 3 tablespoons of melted butter
- a cup of granulated sugar
- 2 teaspoons of ground cinnamon
How to prepare
Cake
- Preheat oven 375°F and coat a standard muffin tin with nonstick cooking spray, then set aside.
- Add the butter and granulated sugar to a large mixing bowl and mix for about 2 minutes, until the mixture is smooth and well combined. Then adding eggs, vanilla, milk also sour cream and mix until combine.
- Stir in flour mixture, butter, baking powder, baking soda, cinnamon, and salt. Use a rubber spatula to fold it in until blended. Be careful not to over mix
- Pour the batter into a greased, spooned muffin tin, filling half of each tin.
- Transfer the muffin pan to the preheated oven and bake for 25 minutes
- After baking, let the muffins cool in the muffin tray for 1-2 minutes, then place them on the cooling rack.
Decorations:
- Melt the butter for the filling in a small bowl. Meanwhile, mix the granulated sugar and cinnamon in another bowl.
- Once the muffins are out of the oven and cooled for a few minutes, brush each muffin with a thin layer of melted butter using a pastry brush.
- Sprinkle the cinnamon-sugar mixture generously over the butter layer.
- Serve hot and enjoy

It also uses muffin tins to bake—-I thought that pancakes were cooked on a griddle. Confused!?!
