Ingredients:

  • Mushrooms
  • Peppers
  • Onions
  • Bacon medallions
  • 4 eggs
  • Pinch of salt and pepper
  • Grated cheese (small amount)

Instructions:

  1. Preheat the oven to 180°C (350°F) and lightly grease a muffin tray with cooking spray or oil.
  2. Chop the mushrooms, peppers, onions, and bacon medallions into small pieces.
  3. Place the chopped ingredients evenly into each muffin cup.
  4. In a mixing bowl, beat the eggs together with a pinch of salt and pepper.
  5. Pour the beaten eggs into each muffin cup, filling them about three-quarters of the way.
  6. Sprinkle a small amount of grated cheese on top of each muffin.
