Cheesy Ranch Oven Roasted Potatoes 

Ingredients:

  • 4 large russet potatoes, scrubbed and diced
  • 1/4 cup olive oil
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
  3. Bake: Spread the potatoes evenly on the prepared baking sheet. Roast for 25-30 minutes, or until golden and crispy, stirring halfway through.
  4. Add Cheese: Sprinkle shredded cheddar cheese and grated Parmesan cheese over the potatoes. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Serve:

Transfer the cheesy ranch potatoes to a serving dish and sprinkle with chopped fresh parsley if desired.
