Chickpea Patties with Yogurt Dip recipe
Ingredients:
For the Patties:
- Chickpeas: 1 cup, cooked (can use canned or dried chickpeas soaked overnight and boiled)
- Egg Yolks: 3
- Red Bell Pepper: 1/4 cup, finely chopped
- Fresh Parsley: 1/4 cup, finely chopped
- Olive Oil: For frying
- Salt and Pepper: To taste
For the Yogurt Dip:
- Greek Yogurt: 1 cup
- Fresh Dill: 1 tablespoon, chopped
- Garlic: 1 clove, minced
- Lemon Juice: 2 teaspoons
- Salt and Pepper: To taste
Instructions
1. Prepare the Chickpeas:
- If using dried chickpeas, soak them overnight and boil until tender. If using canned chickpeas, rinse and drain well.
2. Make the Patties:
- In a bowl, mash the cooked chickpeas until mostly smooth.
- Add the egg yolks, chopped red bell pepper, parsley, and a pinch of salt and pepper. Mix until combined.
- Form the mixture into small patties.
3. Cook the Patties:
- Heat a skillet over medium heat and add a splash of olive oil.
- Fry the patties for 3-4 minutes on each side, or until they are golden brown and crispy on the outside.
4. Prepare the Yogurt Dip:
- In a small bowl, combine the Greek yogurt, chopped dill, minced garlic, lemon juice, and season with salt and pepper to taste. Stir until well mixed.
5. Serve:
- Serve the hot chickpea patties with the tangy yogurt dip on the side.
