Chickpea Patties with Yogurt Dip recipe

Ingredients:

For the Patties:

  • Chickpeas: 1 cup, cooked (can use canned or dried chickpeas soaked overnight and boiled)
  • Egg Yolks: 3
  • Red Bell Pepper: 1/4 cup, finely chopped
  • Fresh Parsley: 1/4 cup, finely chopped
  • Olive Oil: For frying
  • Salt and Pepper: To taste

For the Yogurt Dip:

  • Greek Yogurt: 1 cup
  • Fresh Dill: 1 tablespoon, chopped
  • Garlic: 1 clove, minced
  • Lemon Juice: 2 teaspoons
  • Salt and Pepper: To taste

Instructions

1. Prepare the Chickpeas:
  • If using dried chickpeas, soak them overnight and boil until tender. If using canned chickpeas, rinse and drain well.
2. Make the Patties:
  • In a bowl, mash the cooked chickpeas until mostly smooth.
  • Add the egg yolks, chopped red bell pepper, parsley, and a pinch of salt and pepper. Mix until combined.
  • Form the mixture into small patties.
3. Cook the Patties:
  • Heat a skillet over medium heat and add a splash of olive oil.
  • Fry the patties for 3-4 minutes on each side, or until they are golden brown and crispy on the outside.
4. Prepare the Yogurt Dip:
  • In a small bowl, combine the Greek yogurt, chopped dill, minced garlic, lemon juice, and season with salt and pepper to taste. Stir until well mixed.
5. Serve:
  • Serve the hot chickpea patties with the tangy yogurt dip on the side.
