Chimichurri shrimp
Ingredients:
- 1 pound large shrimp, peeled and deveined
- Salt and pepper to taste
- Olive oil
- Chimichurri sauce (recipe below)
For the chimichurri sauce: - 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 3 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 tablespoon fresh oregano, finely chopped
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions:
- Prepare the chimichurri sauce by combining all the ingredients in a bowl. Mix well and set aside to let the flavors meld together.
- Season the shrimp with salt and pepper.
- Heat a large skillet over medium-high heat and add a drizzle of olive oil.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
- Serve the chimichurri shrimp hot, garnished with additional chimichurri sauce and a sprinkle of fresh herbs if desired.
- Remove the skillet from heat and stir in a generous amount of chimichurri sauce, reserving some for serving.
