Chimichurri shrimp

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • Salt and pepper to taste
  • Olive oil
  • Chimichurri sauce (recipe below)
    For the chimichurri sauce:
  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tablespoon fresh oregano, finely chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions:

  1. Prepare the chimichurri sauce by combining all the ingredients in a bowl. Mix well and set aside to let the flavors meld together.
  2. Season the shrimp with salt and pepper.
  3. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  4. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
  5. Serve the chimichurri shrimp hot, garnished with additional chimichurri sauce and a sprinkle of fresh herbs if desired.
  6. Remove the skillet from heat and stir in a generous amount of chimichurri sauce, reserving some for serving.
