Fried Potatoes and Onions recipe
Ingredients:

- 2 lbs baby red potatoes (or gold potatoes), cut into 1 – 1 1/2 inch pieces
- 1 onion, sliced into thick half circles
- 1 red bell pepper, cut into 1-inch pieces
- 8 oz smoked sausage or kielbasa (preferably smoked Polish kielbasa), cut into 1-inch pieces
- 8 oz fresh mushrooms (baby Bella or white button), halved or quartered
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1 teaspoon fresh thyme
- 1 tablespoon spice/dry herbs blend
- Salt and ground black pepper to taste
- Fresh herbs, minced (parsley, thyme, chives, dill)
Optional Ingredients:
- Additional vegetables (e.g., zucchini, carrots)
- Different types of sausages (e.g., chorizo, turkey sausage)
Directions:
- Preheat Oven: If using an oven, preheat to 400°F (200°C).
- Prepare Vegetables: Cut the potatoes, onion, bell pepper, and mushrooms as specified.
- Heat Oil: In a large skillet, heat 1/4 cup of olive oil over medium-high heat.
- Cook Potatoes: Add the potatoes and cook for about 10-15 minutes until they begin to soften and brown.
- Add Sausage and Vegetables: Add the sliced sausage, onion, bell pepper, and mushrooms to the
- skillet. Cook for another 10 minutes, stirring occasionally.
- Season: Add the minced garlic, fresh thyme, spice blend, salt, and pepper. Stir well to combine and cook for an additional 5 minutes until the vegetables are tender and the sausage is cooked through.
- Finishing Touches: Sprinkle fresh minced herbs over the dish before serving.
- Serve: Serve hot, straight from the skillet, or transfer to a serving dish.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
