I’m a little embarrassed by how much I love this dish

Ingredients:

  • Boneless, skinless chicken breasts
  • Swiss cheese slices 4
  • Deli ham slices 4
  • All-purpose flour 1/2 cup
  • Eggs 2, beaten
  • Breadcrumbs 1.25 cups
  • Grated Parmesan cheese 1/2 cup
  • Garlic powder 1 teaspoon
  • Paprika 1/2 teaspoon
  • Salt & pepper To taste

Instructions:

  1. Prep the Chicken: Preheat your oven to 375°F (190°C) and grease a baking dish. Pound each chicken breast thin (about 1/4 inch) between plastic wrap.
  2. Assemble: Lay a slice of Swiss cheese and ham on each chicken breast. Roll them up tightly and secure them with toothpicks if needed.
  3. Breading Stations: Set up 3 shallow dishes. Fill the first with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Bread the Chicken: Dredge each roll in flour, then dip it in the egg mixture, making sure it’s fully coated. Finally, roll it in the breadcrumb mixture, pressing gently for a good coating. Place the breaded rolls in the baking dish.
  5. Bake & Rest: Bake for 25-30 minutes, or until the chicken is cooked through and the breading is golden brown. Let the chicken rest for a few minutes before slicing and serving.
  6. Serve: Enjoy your Chicken Cordon Bleu hot, garnished with fresh parsley if you like. It pairs well with steamed vegetables, mashed potatoes, or a fresh green salad.
