Lemon Garlic Butter Chicken & Green Beans Skillet
Ingredients:
For the Lemon Garlic Butter Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Zest and juice of 1 lemon
- 3 tablespoons unsalted butter
- Fresh parsley, chopped for garnish
For the Green Beans:
- 1 lb (450g) fresh green beans, trimmed
- Salt, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1/2 lemon
- Salt and pepper, to taste
Instructions:
Prepare the Chicken:
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes
on each side, or until they are golden brown and cooked through. - Remove the chicken from the skillet and set aside.
Make the Lemon Garlic Butter Sauce:
- In the same skillet, add minced garlic, dried oregano, dried thyme, and paprika.
Sauté for about 1 minute, until fragrant. - Add lemon zest and juice to the skillet, stirring to combine.
- Reduce the heat to low and add the butter to the skillet, stirring until melted
and incorporated into the sauce. - Return the cooked chicken breasts to the skillet, spooning the lemon garlic
butter sauce over them. Cook for an additional 2-3 minutes to allow the flavors
to meld together.
Prepare the Green Beans:
- While the chicken is cooking, bring a pot of salted water to a boil. Add the
trimmed green beans and cook for about 3-4 minutes, or until they are crisp-
tender. Drain the green beans and set aside. - In a separate skillet, heat olive oil over medium heat. Add minced garlic and
sauté for about 1 minute, until fragrant. - Add the blanched green beans as well
