Slow cooker Southern Dumplings

Ingredients:

For the Dumplings:
  • 2 cups self-rising flour
  • ¼ cup shortening or lard
  • ¾ cup boiling water

Directions:

Make the Dough:
  • Place the self-rising flour in a large mixing bowl. Using a pastry blender or a fork, cut in the shortening or lard until the mixture resembles coarse crumbs.
  • Slowly add the boiling water, a little at a time, stirring until the dough comes together and can be shaped into a ball.
For Flat Dumplings:
  • Lightly flour a clean surface and roll out the dough to about ⅛ inch thickness.
  • Using a pizza cutter or sharp knife, cut the dough into strips, then into squares. Set aside.
For Drop Dumplings:

Skip the rolling—just pinch off small pieces of dough in your desired size for a rustic drop-dumpling style.

Cook the Dumplings:
  • Bring your soup, broth, or fruit mixture to a gentle boil. Drop in a few dumplings at a time to prevent sticking. Cover the pot with a lid and let them cook undisturbed for a few minutes.
  • Continue adding more dumplings in batches.
  • Once all the dumplings are in, reduce the heat to a simmer. Cover and cook for about 20 minutes, until the dumplings are tender and fluffy.
