The first step is to soak the mixed fruit in a mixture of chocolate milk and Baileys for 24 hours. This step is crucial as it ensures that the fruit is plump and juicy, which adds to the cake’s overall texture and flavor.
After 24 hours, fold in the self-raising flour. Make sure to mix everything together thoroughly.
Next, line your slow cooker with two to three layers of baking paper around it and underneath. It’s also a good idea to double a long strip and put it in first so that it’s easier to pull out when the cake is cooked.
Pour the batter into the slow cooker and even it out with a spatula.
Cook on low for 7-8 hours. Make sure to place a tea towel under the lid to prevent condensation from dripping onto the cake.
