4 Ingredients Slow Cooker Cake

This Slow Cooker 4 Ingredients Cake recipe holds a special place in my heart. It’s a family recipe that has been passed down from my grandmother, who used to make it every year for Christmas. The tradition continued when my mother took over, and now I make it every year for my family.

What I love most about this recipe is how easy it is to make, yet how delicious it tastes. The combination of mixed fruit, chocolate milk, and Baileys creates a rich, moist cake that is perfect for any occasion. I also love how versatile it is, as you can customize it to your liking by swapping out the fruit or liqueur.

Whenever I make this cake, it takes me back to fond memories of spending time with my grandmother in the kitchen, mixing ingredients and chatting about life. I hope that this recipe brings as much joy and deliciousness to your family as it has to mine.

Slow Cooker Cake Recipe

Ingredients:

To make this cake, you’ll need just four simple ingredients:

  • 1 kg mixed fruit (I add a pack of glacé cherries)
  • 2 cups Chocolate Milk
  • 1/2 to 3/4 Cup Baileys (my preference)
  • 2 cups self-raising Flour

Directions:

  1. The first step is to soak the mixed fruit in a mixture of chocolate milk and Baileys for 24 hours. This step is crucial as it ensures that the fruit is plump and juicy, which adds to the cake’s overall texture and flavor.
  2. After 24 hours, fold in the self-raising flour. Make sure to mix everything together thoroughly.
  3. Next, line your slow cooker with two to three layers of baking paper around it and underneath. It’s also a good idea to double a long strip and put it in first so that it’s easier to pull out when the cake is cooked.
  4. Pour the batter into the slow cooker and even it out with a spatula.
  5. Cook on low for 7-8 hours. Make sure to place a tea towel under the lid to prevent condensation from dripping onto the cake.
  6. Once the cake is cooked, remove it from the slow cooker and let it cool completely before slicing and serving.

Best Servings

This Slow Cooker 4 Ingredients Cake is perfect for any occasion, from a casual family gathering to a fancy dinner party. Serve it warm with a scoop of vanilla ice cream or a dollop of whipped cream for a decadent treat.

Cook Notes

The beauty of this recipe is that it’s incredibly easy to customize to your tastes. For example, you can swap out the mixed fruit for your favorite dried fruit or nuts. You can also experiment with different liqueurs in place of the Baileys, such as rum or brandy.

One thing to keep in mind is that slow cookers can vary in temperature, so it’s important to keep an eye on your cake while it’s cooking. If you find that your cake is browning too quickly or burning, reduce the cooking time or adjust the temperature accordingly.
