- 1 tbsp vanilla extract
- 2 tbsp butter or coconut oil melted
- 1 tbsp baking powder
- 6 tbsp almond milk or coconut milk, unsweetened
- 1 tbsp powdered sweetener optional
- ΒΌ cup coconut flour
- 3 eggs large
- Melted butter / coconut oil for frying
Beat eggs with a balloon beater or with an electric mixer. Add all the remaining ingredients and beat until you get a smooth mixture. Leave the mixture for a few minutes so that the coconut flour absorbs the liquid.
Melt the butter or coconut oil in a skillet or non-stick skillet over low heat. Use 2 tbsp of the mixture to make one pancake and spread it out using the back of the spoon. The pancakes should be about 4 inches/10 cm in diameter.
Fry the pancakes over low heat until bubbles form on the surface, about 3 minutes. Do not move them during this time. Then flip and cook for another minute. Please don't overheat otherwise you have the risk of burning them.
