  • 1 tbsp vanilla extract
  • 2 tbsp butter or coconut oil melted
  • 1 tbsp baking powder
  • 6 tbsp almond milk or coconut milk, unsweetened
  • 1 tbsp powdered sweetener optional
  • ¼ cup coconut flour
  • 3 eggs large
  • Melted butter / coconut oil for frying

Instructions
 

  • Beat eggs with a balloon beater or with an electric mixer. Add all the remaining ingredients and beat until you get a smooth mixture. Leave the mixture for a few minutes so that the coconut flour absorbs the liquid.
  • Melt the butter or coconut oil in a skillet or non-stick skillet over low heat. Use 2 tbsp of the mixture to make one pancake and spread it out using the back of the spoon. The pancakes should be about 4 inches/10 cm in diameter.
  • Fry the pancakes over low heat until bubbles form on the surface, about 3 minutes. Do not move them during this time. Then flip and cook for another minute. Please don't overheat otherwise you have the risk of burning them.
