Ingredients:
- 1 pound of mushrooms, cleaned and stems removed
- 3 tablespoons balsamic vinegar
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 4 cloves of garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the balsamic vinegar, soy sauce, olive oil, minced garlic, salt, and pepper.
- Add the mushrooms to the bowl and toss them in the marinade until they are well coated.
- Let the mushrooms marinate for about 15-20 minutes, stirring occasionally to ensure they are evenly coated.
- Transfer the mushrooms to a baking dish in a single layer.
- Roast the mushrooms in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through the cooking time.
