CABBAGE AND EGGS

PREP TIME5 minutes 
COOK TIME10 minutes 

INGREDIENTS:

  • 1 Tbsp butter or olive oil I like a combination of the two
  • 1 garlic clove minced
  • 1 cup lightly packed cabbage finely shredded
  • 2 eggs lightly beaten
  • salt and pepper to taste

INSTRUCTIONS:

  1. Heat a non-stick pan over medium heat.
  2. Add in the butter and/or oil and spread it in the pan.
  3. Add in the garlic and let it become fragrant for 20 seconds or so.
  4. Add in the cabbage and cook, stirring frequently, until it softens, about 3-5 minutes. I like to cook mine until it is beginning to caramelize, which can take a minute or two longer.
  5. Spread the cabbage out in a thin layer.
  6. Pour in the eggs, tilting the pan a bit to spread them out.
  7. Let the eggs cook for about 15-20 seconds and then fold them over gently until they are cooked through.
  8. Remove from heat and serve immediately!

    1. I’m just trying to figure out how you shape all the hotness into an egg roll cause I love cabbage?

      1. Try cooking on a tray on parchment paper in the oven when done take out oven and use parchment paper to roll good luck

    1. She did one at a time. As it says in the recipe cook cabbage and then pour egg into the pan 15 -20 seconds. You’ll be able to roll it up. Maybe you can do 2 at a time

  3. I don’t see nutritional information on the Cabage and eggs. Where would I find that?

    1. You can Google” calories in cabbage “,then Google ” calories in eggs” and same with any other ingredients you may add,simple!

  4. You can add some spinach & cheese too. Though it may be harder to roll with the cheese. But you can just eat it like an omlette.

  5. Sounds yummy. This recipe reminds me of a very minimalist “Egg foo young”, just the eggs & cabbage. Egg foo young can include, thin sliced celery, bean sprouts, shredded carrots, zucchini, etc. it’s all good for diabetics
