Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet dry ranch dressing mix
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • ½ cup chicken broth or water
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:

  1. Add chicken and liquid: Lightly grease your slow cooker with cooking spray. Place the chicken breasts in the bottom and pour the chicken broth or water over them.
  2. Add seasonings and cream cheese: Sprinkle the ranch seasoning mix over the chicken. Top with the cubed cream cheese.
  3. Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and easily shreddable.
  4. Shred and mix: Once cooked, use two forks to shred the chicken directly in the crockpot. Stir everything together until the cream cheese is well combined and the mixture is smooth.
  5. Add cheese and bacon: Stir in the shredded cheddar cheese and most of the crumbled bacon. Put the lid back on for about 5-10 minutes, or until the cheese is completely melted and bubbly.
