Ingredients:
- 2 lbs boneless, skinless chicken breasts
- 1 packet dry ranch dressing mix
- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- ½ cup chicken broth or water
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions:
- Add chicken and liquid: Lightly grease your slow cooker with cooking spray. Place the chicken breasts in the bottom and pour the chicken broth or water over them.
- Add seasonings and cream cheese: Sprinkle the ranch seasoning mix over the chicken. Top with the cubed cream cheese.
- Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and easily shreddable.
- Shred and mix: Once cooked, use two forks to shred the chicken directly in the crockpot. Stir everything together until the cream cheese is well combined and the mixture is smooth.
- Add cheese and bacon: Stir in the shredded cheddar cheese and most of the crumbled bacon. Put the lid back on for about 5-10 minutes, or until the cheese is completely melted and bubbly.
