Irresistible Broccoli Meatballs

Ingredients:
- Broccoli: 1 head (about 500 grams / 1.1 lbs)
- Carrot: 1 medium (about 100-120 grams)
- Green Onion: 2-3 sprigs, finely chopped
- Parsley: 1/4 bunch, chopped
- Garlic: 2 cloves, minced
- Eggs: 2 large
- Salt: To taste
- Black Pepper: To taste
- Mozzarella Cheese: 150 grams (about 5.3 oz), cubed or shredded
- Breadcrumbs: 2 tablespoons
- Yellow Cheese: 100 grams (about 3.5 oz), grated
- Vegetable Oil: For brushing
Instructions:
Prepare the Broccoli:
- Cut broccoli into small florets
- Place in a saucepan and cover with water
- Add a pinch of salt
- Cook for 5 minutes
- Drain thoroughly
- Rinse with cold water
- Allow to drain completely
Prepare Vegetable Mixture:
- Peel and grate the carrot into a large mixing bowl
- Finely chop green onion and parsley
- Mince garlic
- Add chopped herbs and garlic to the grated carrot
Combine Ingredients:
- Finely chop the cooled broccoli
- Add chopped broccoli to the vegetable mixture
- Grate yellow cheese and mix into the vegetables
- Beat eggs in a separate small bowl
- Pour eggs into the vegetable mixture
- Season with salt and pepper
- Add breadcrumbs and mix well
Shape and Prepare:
- Preheat oven to 180°C (350°F)
- Line a baking sheet with parchment paper
- Wet hands slightly to prevent sticking
- Shape mixture into small, uniform meatballs
- Arrange meatballs on the prepared baking sheet
- Lightly brush with vegetable oil
Bake to Perfection:
- Bake for 25 minutes
- Remove from oven
- Sprinkle grated mozzarella on top
- Return to oven
- Bake for an additional 5-10 minutes until golden brown and cheese is melted
