Irresistible Broccoli Meatballs

Ingredients:

  • Broccoli: 1 head (about 500 grams / 1.1 lbs)
  • Carrot: 1 medium (about 100-120 grams)
  • Green Onion: 2-3 sprigs, finely chopped
  • Parsley: 1/4 bunch, chopped
  • Garlic: 2 cloves, minced
  • Eggs: 2 large
  • Salt: To taste
  • Black Pepper: To taste
  • Mozzarella Cheese: 150 grams (about 5.3 oz), cubed or shredded
  • Breadcrumbs: 2 tablespoons
  • Yellow Cheese: 100 grams (about 3.5 oz), grated
  • Vegetable Oil: For brushing

Instructions:

Prepare the Broccoli:
  • Cut broccoli into small florets
  • Place in a saucepan and cover with water
  • Add a pinch of salt
  • Cook for 5 minutes
  • Drain thoroughly
  • Rinse with cold water
  • Allow to drain completely
Prepare Vegetable Mixture:
  • Peel and grate the carrot into a large mixing bowl
  • Finely chop green onion and parsley
  • Mince garlic
  • Add chopped herbs and garlic to the grated carrot
Combine Ingredients:
  • Finely chop the cooled broccoli
  • Add chopped broccoli to the vegetable mixture
  • Grate yellow cheese and mix into the vegetables
  • Beat eggs in a separate small bowl
  • Pour eggs into the vegetable mixture
  • Season with salt and pepper
  • Add breadcrumbs and mix well
Shape and Prepare:
  • Preheat oven to 180°C (350°F)
  • Line a baking sheet with parchment paper
  • Wet hands slightly to prevent sticking
  • Shape mixture into small, uniform meatballs
  • Arrange meatballs on the prepared baking sheet
  • Lightly brush with vegetable oil
Bake to Perfection:
  • Bake for 25 minutes
  • Remove from oven
  • Sprinkle grated mozzarella on top
  • Return to oven
  • Bake for an additional 5-10 minutes until golden brown and cheese is melted
