Skillet Garlic Parmesan Chicken

Ingredients:

For the Chicken:
  • 1 lb chicken breasts, sliced
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • For the Crispy Potatoes:
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Directions:

  1. Prepare Potatoes: Preheat the oven to 425°F (220°C). Toss the halved potatoes with olive oil, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until crispy.
  2. Cook Chicken: In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add chicken slices, season with salt, pepper, and Italian seasoning. Cook for 6-7 minutes on each side until golden and cooked through.
  3. Add Cheese: Sprinkle Parmesan cheese over the chicken, allowing it to melt for a minute.
  4. Serve: Plate the chicken alongside crispy potatoes. Garnish with fresh parsley.
