Ingredients
- 2½ pounds baby potatoes or small Yukon Gold potatoes
- 3 tablespoons melted butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- ½ cup chicken broth or vegetable broth
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh chives or green onions
- Optional: ½ teaspoon red pepper flakes for a little heat
Instructions
- Prepare the potatoes:
Wash the baby potatoes thoroughly and place them in the slow cooker. If using larger potatoes, cut them into evenly sized halves to ensure uniform cooking. - Season the potatoes:
In a small bowl, combine the melted butter, olive oil, minced garlic, salt, black pepper, paprika, garlic powder, onion powder, and Italian seasoning. Pour the mixture over the potatoes and toss gently until they are evenly coated. - Slow cook:
Pour the chicken or vegetable broth around the potatoes. Cover the slow cooker and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the potatoes are completely tender and easily pierced with a fork. - Drain excess liquid:
Once cooked, carefully remove any excess liquid from the slow cooker, leaving just a small amount to keep the potatoes moist and flavorful. - Smash the potatoes:
Using a potato masher or the back of a large spoon, gently press down on each potato until slightly flattened. Avoid over-mashing—the potatoes should remain rustic and chunky. - Add the topping:
Sprinkle the smashed potatoes evenly with shredded cheddar cheese and Parmesan cheese. - Create a golden finish:
If your slow cooker has a removable oven-safe insert, place it under a preheated broiler for 3–5 minutes, until the top becomes golden and lightly crisp. Alternatively, transfer the potatoes to a baking dish and broil. - Garnish and serve:
Finish with freshly chopped chives or green onions. Serve immediately while hot, creamy, and beautifully golden.
