Sugar-Free Yogurt Cake

Ingredients:
- 1 ½ cups plain Greek yogurt
- 1/3 cup honey or maple syrup
- 3 large eggs
- 1 tsp vanilla extract
- 1 ½ cups whole wheat flour or almond flour
- 1 ½ tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- Zest of 1 lemon (optional)
- 1/2 cup fresh berries or chopped nuts (optional)
Directions:
Preparing the Cake:
- Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- Mix Wet Ingredients
- In a large bowl, whisk together the Greek yogurt, honey or maple syrup, eggs, and vanilla extract until smooth and well combined.
- Combine Dry Ingredients
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest (if using).
- Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Add Berries or Nuts (Optional)
- Gently fold in fresh berries or chopped nuts if desired.
- Baking the Cake
- Pour Batter
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
