Sugar-Free Yogurt Cake

Ingredients:

  • 1 ½ cups plain Greek yogurt
  • 1/3 cup honey or maple syrup
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups whole wheat flour or almond flour
  • 1 ½ tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Zest of 1 lemon (optional)
  • 1/2 cup fresh berries or chopped nuts (optional)

Directions:

Preparing the Cake:
  1. Preheat the Oven
  2. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  3. Mix Wet Ingredients
  4. In a large bowl, whisk together the Greek yogurt, honey or maple syrup, eggs, and vanilla extract until smooth and well combined.
  5. Combine Dry Ingredients
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest (if using).
  7. Combine Wet and Dry Ingredients
  8. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  9. Add Berries or Nuts (Optional)
  10. Gently fold in fresh berries or chopped nuts if desired.
  11. Baking the Cake
  12. Pour Batter
  13. Pour the batter into the prepared cake pan and spread it evenly.
  14. Bake
  15. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  16. Cool
  17. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
