Classic Crispy Potato Pancakes

Ingredients:

  • 4 large potatoes, peeled
  • 1 small onion
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Vegetable oil for frying
  • Optional for serving:
  • Sour cream
  • Applesauce
  • Fresh parsley

Instructions:

  • Grate the potatoes and onion using a box grater or food processor.
  • Place the grated mixture into a clean kitchen towel and squeeze out as much liquid as possible. This step helps make the pancakes extra crispy.
  • Transfer the potato mixture into a large bowl.
  • Add eggs, flour, salt, black pepper, and garlic powder. Mix well until fully combined.
  • Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
  • Scoop about 2 tablespoons of the potato mixture for each pancake and flatten slightly in the pan.
  • Cook for 3 to 4 minutes on each side until golden brown and crispy.
  • Remove the pancakes and place them on paper towels to drain excess oil.
