Classic Crispy Potato Pancakes
Ingredients:
- 4 large potatoes, peeled
- 1 small onion
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Vegetable oil for frying
- Optional for serving:
- Sour cream
- Applesauce
- Fresh parsley
Instructions:
- Grate the potatoes and onion using a box grater or food processor.
- Place the grated mixture into a clean kitchen towel and squeeze out as much liquid as possible. This step helps make the pancakes extra crispy.
- Transfer the potato mixture into a large bowl.
- Add eggs, flour, salt, black pepper, and garlic powder. Mix well until fully combined.
- Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
- Scoop about 2 tablespoons of the potato mixture for each pancake and flatten slightly in the pan.
- Cook for 3 to 4 minutes on each side until golden brown and crispy.
- Remove the pancakes and place them on paper towels to drain excess oil.
