Cottage Cheese Bagels
Ingredients:
- 1 cup cottage cheese (full fat for best texture) (240 grams),
- 2 large eggs,
- 1 1/2 cups oat flour or almond flour (gluten-free option) (150 grams),
- 1 teaspoon baking powder (5 grams),
- 1/2 teaspoon salt (2.5 grams),
- Optional toppings: everything bagel seasoning, sesame seeds, poppy seeds, shredded cheese.
Directions:
- Preheat oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper. This will prevent the bagels from sticking and make cleanup easier.
- Blend cottage cheese and eggs: In a blender or food processor, combine the cottage cheese and large eggs. Blend until the mixture is smooth and creamy. This step ensures a nice texture for your bagels.
- Mix dry ingredients: In a mixing bowl, combine the oat flour or almond flour, baking powder, and salt. Stir these dry ingredients together until well mixed.
- Combine ingredients: Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Stir everything together until a soft dough forms. Be careful not to overmix, as this can change the texture of your bagels.
- Form bagels: Divide the dough into 4-6 equal portions. Roll each portion into a ball and poke a hole in the center to create the bagel shape. Make sure the hole is big enough so it does not close while baking.
- Add toppings (optional): If you like, brush the tops of the bagels with an egg wash. This is optional but will give your bagels a shiny finish. Sprinkle your favorite toppings, such as everything bagel seasoning, sesame seeds, poppy seeds, or shredded cheese.
- Bake bagels: Place the bagels on the prepared baking sheet and bake them in the preheated oven for 18-22 minutes. They should be golden brown when done.
- Cool before slicing: Once baked, remove the bagels from the oven and let them cool on a wire rack for 5-10 minutes. This cooling step will help them set and makes slicing easier.
- Air Fryer option: If you prefer to use an air fryer, preheat it to 350°F (175°C). Place the bagels in the air fryer basket, leaving space between each one. Air fry for 12-15 minutes, flipping halfway through for even cooking.
