Ingredients:

For the Salad:

  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup cooked ground beef seasoned with taco seasoning
  • ½ cup shredded cheddar cheese
  • ¼ cup sliced black olives
  • ½ cup diced red onion
  • 1 cup crushed Doritos Nacho Cheese or your favorite flavor
  • ¼ cup sour cream optional
  • ¼ cup salsa or taco sauce
  • 2 tablespoons chopped fresh cilantro optional

For the Homemade Taco Seasoning:

  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt & pepper to taste

Instructions:

  1. Prepare the beef: In a large skillet over medium heat, cook the ground beef until completely browned and no pink remains. Carefully drain the excess fat from the pan.
  2. Season the meat: Stir the homemade taco seasoning (chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper) into the beef along with a splash of water. Let it simmer gently for 2-3 minutes until the liquid reduces and coats the meat. Remove the skillet from the heat and let it cool slightly.
  3. Assemble the salad base: In a large serving bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced red onion, sliced black olives, and shredded cheddar cheese.
  4. Add protein: Top the fresh vegetable base generously with the warm, seasoned ground beef.
  5. Add crunch: Sprinkle the crushed Doritos evenly over the top of the entire salad.
  6. Dress it up: Drizzle the sour cream and salsa directly over the top, or toss everything gently to combine the flavors.
  7. Garnish and Serve: Sprinkle the fresh chopped cilantro on top if desired. Serve immediately to ensure the absolute best crunch and texture!
