Easy Diabetic Yogurt Flatbread
Ingredients:
- Makes 1 loaf
- 2 cups all-purpose flour (or a gluten-free blend, if preferred)
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup plain yogurt (full-fat works best for richness)
Optional Mix-Ins :
- 1/4 cup chopped fresh herbs (like rosemary or thyme)
- 1/4 cup sesame seeds, poppy seeds, or everything bagel seasoning
- 1/2 cup shredded cheese (cheddar, Parmesan, or feta work well)
Instructions:
Mix the Dough:
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- Add the yogurt and mix with a spatula or your hands until a shaggy dough forms. If the dough feels too dry, add 1–2 tablespoons of milk to bring it together.
Knead and Shape:
- Turn the dough out onto a lightly floured surface and knead gently for 2–3 minutes , just until smooth. Avoid overworking the dough.
- Shape the dough into a round loaf or divide it into smaller rolls if desired.
Cook on the Stovetop:
- Heat a heavy-bottomed skillet, griddle, or Dutch oven over medium heat. Lightly grease the surface with oil or butter.
- Place the shaped dough into the skillet and cover with a lid to trap the heat and help the bread rise.
- Cook for 6–8 minutes per side , or until the bottom is golden brown and the top is firm.
- Flip carefully and cook the other side, covered, until fully cooked through.
