Seasonings for the Fries

- Salt and black pepper, to taste
For the Voodoo Sauce
- 1/2 cup mayonnaise
- 2 tbsp sriracha – Gives the sauce its signature kick.
- 1 tbsp honey – Balances out the heat with a touch of sweetness.
- 1 tsp garlic powder
- 1 tsp paprika
For the Topping
- 4-5 slices turkey bacon – Cooked and crumbled.

Start by washing and scrubbing the potatoes thoroughly to remove any dirt. Then:
- Cut the potatoes into fries, about 1/4-inch thick for even cooking.
- Soak the cut fries in cold water for 30 minutes. This step helps remove excess starch, ensuring crispier fries.
- Drain and pat them dry using a clean kitchen towel. Moisture is the enemy of crispiness, so get them as dry as possible.
2. Season the Fries
In a large mixing bowl:
- Toss the dry fries with paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Make sure every fry is evenly coated — this seasoning blend is where the voodoo magic starts!
3. Bake the Fries
Preheat your oven to 425°F (220°C). Then:
- Arrange the seasoned fries in a single layer on a parchment-lined baking sheet.

While your fries are baking:
- Heat a skillet over medium heat and cook the turkey bacon until crispy, about 5–7 minutes.
- Transfer to a paper towel-lined plate to absorb excess oil, then crumble into small pieces.
5. Make the Voodoo Sauce
In a small bowl, combine:
- Mayonnaise
- Sriracha
- Honey
- Garlic powder
- Paprika
Whisk until smooth and creamy. Taste and adjust the spice level by adding more sriracha or honey based on your preference.

Time to bring it all together:
