Non-Alcoholic Summertime Spritz

Ingredients:
- 1 twist lemon peel
- 5 mint leaves, or more to taste
- 1 ounce elderflower syrup (I used Belvoir brand, but Bottlegreen or homemade is also good!)
- 2 ounces tonic water
- 3 ounces club soda
- ice, as needed
- 1 sprig mint, for garnish
Directions:
- In a glass, muddle lemon peel, mint leaves, and a drop of syrup together.
- Pour over remaining syrup, tonic water, and club soda.
- Stir gently to combine.
- Fill a glass with ice and pour elderflower spritz over it.
- Garnish with a mint sprig.
