Slow Cooker Amish Pork and Butter Beans

Ingredients:
- 3 pounds boneless pork shoulder (pork butt), cut into large chunks
- 3 cans (15–16 oz each) butter beans, drained and rinsed
- 2 cups low-sodium beef broth
- 1 packet (about 1 oz) dry onion soup mix
- Optional: black pepper, to taste
Instructions:
- Place the drained and rinsed butter beans evenly in the bottom of a 5–7 quart slow cooker.
- Arrange the large pork chunks on top of the beans.
- In a bowl, whisk together the beef broth and dry onion soup mix until well combined.
- Pour the mixture evenly over the pork and beans.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the pork is very tender and easily pulls apart with a fork.
- If desired, gently skim excess fat from the surface. Spoon some of the flavorful gravy over the pork and beans.
- Taste before adding extra salt, since the soup mix already contains seasoning.
- Serve hot and enjoy!
