Slow Cooker Amish Pork and Butter Beans

Ingredients:

  • 3 pounds boneless pork shoulder (pork butt), cut into large chunks
  • 3 cans (15–16 oz each) butter beans, drained and rinsed
  • 2 cups low-sodium beef broth
  • 1 packet (about 1 oz) dry onion soup mix
  • Optional: black pepper, to taste

Instructions:

  1. Place the drained and rinsed butter beans evenly in the bottom of a 5–7 quart slow cooker.
  2. Arrange the large pork chunks on top of the beans.
  3. In a bowl, whisk together the beef broth and dry onion soup mix until well combined.
  4. Pour the mixture evenly over the pork and beans.
  5. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the pork is very tender and easily pulls apart with a fork.
  6. If desired, gently skim excess fat from the surface. Spoon some of the flavorful gravy over the pork and beans.
  7. Taste before adding extra salt, since the soup mix already contains seasoning.
  8. Serve hot and enjoy!
