Ingredients:
- 5 slices bacon, finely chopped
- 3 pounds boneless beef chuck, cut into 1-inch cubes
- 1 cup red cooking wine
- 2 cups chicken broth
- 1/2 cup tomato sauce
- 1/4 cup soy sauce
- 1/4 cup flour
- 3 garlic cloves, finely chopped
- 2 tablespoons thyme, finely chopped
- 5 medium carrots, sliced
- 1 pound baby potatoes (tri-color if available)
- 8 ounces fresh mushrooms, sliced
- Fresh chopped parsley, for garnish
Instructions:
- In a large skillet, cook the bacon over medium-high heat until crisp. Remove the bacon and place it in the slow cooker.
- Season the beef with salt and pepper, then add it to the skillet. Sear the beef on each side for 2-3 minutes until browned. Transfer the beef to the slow cooker.
- Pour the red wine into the skillet, scraping down the brown bits on the sides. Allow it to simmer and reduce for a few minutes. Slowly add the chicken broth, tomato sauce, and soy sauce, stirring well.
- Sprinkle the flour into the skillet, whisking constantly to avoid any lumps. Continue whisking until the sauce thickens slightly. Pour the sauce into the slow cooker.
- Add the garlic, thyme, carrots, baby potatoes, and mushrooms to the slow cooker. Give it a good stir to combine all the ingredients.
- Cook on low heat for 8-10 hours or on high heat for 6 hours until the beef is tender.
