Ingredients:

  • 5 slices bacon, finely chopped
  • 3 pounds boneless beef chuck, cut into 1-inch cubes
  • 1 cup red cooking wine
  • 2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup soy sauce
  • 1/4 cup flour
  • 3 garlic cloves, finely chopped
  • 2 tablespoons thyme, finely chopped
  • 5 medium carrots, sliced
  • 1 pound baby potatoes (tri-color if available)
  • 8 ounces fresh mushrooms, sliced
  • Fresh chopped parsley, for garnish

Instructions:

  1. In a large skillet, cook the bacon over medium-high heat until crisp. Remove the bacon and place it in the slow cooker.
  2. Season the beef with salt and pepper, then add it to the skillet. Sear the beef on each side for 2-3 minutes until browned. Transfer the beef to the slow cooker.
  3. Pour the red wine into the skillet, scraping down the brown bits on the sides. Allow it to simmer and reduce for a few minutes. Slowly add the chicken broth, tomato sauce, and soy sauce, stirring well.
  4. Sprinkle the flour into the skillet, whisking constantly to avoid any lumps. Continue whisking until the sauce thickens slightly. Pour the sauce into the slow cooker.
  5. Add the garlic, thyme, carrots, baby potatoes, and mushrooms to the slow cooker. Give it a good stir to combine all the ingredients.
  6. Cook on low heat for 8-10 hours or on high heat for 6 hours until the beef is tender.
  7. Once cooked, garnish with fresh chopped parsley.
  8. Serve the Slow Cooker Beef Bourguignon with mashed potatoes or crusty bread for a complete meal.
