Slow Cooker Hawaiian Pork Chops

Ingredients:

  • 4 boneless or bone-in pork chops
  • 1 can (20 oz) pineapple chunks, drained (reserve some juice)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small onion, diced
  • 1 cup barbecue sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and black pepper to taste

Method:

  1. Season the pork chops lightly with salt and black pepper.
  2. Place the pork chops in the slow cooker and top with the pineapple chunks, bell peppers, and onion.
  3. In a bowl, mix the barbecue sauce, soy sauce, brown sugar, garlic, ginger, and a few tablespoons of reserved pineapple juice.
  4. Pour the sauce evenly over the pork chops and vegetables.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the pork is tender.
  6. If you prefer a thicker sauce, stir in a cornstarch slurry during the last 20–30 minutes of cooking.
  7. Serve hot with rice, mashed potatoes, or your favorite side dishes.
