Slow Cooker Hawaiian Pork Chops
Ingredients:
- 4 boneless or bone-in pork chops
- 1 can (20 oz) pineapple chunks, drained (reserve some juice)
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small onion, diced
- 1 cup barbecue sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch (optional, for thickening)
- Salt and black pepper to taste
Method:
- Season the pork chops lightly with salt and black pepper.
- Place the pork chops in the slow cooker and top with the pineapple chunks, bell peppers, and onion.
- In a bowl, mix the barbecue sauce, soy sauce, brown sugar, garlic, ginger, and a few tablespoons of reserved pineapple juice.
- Pour the sauce evenly over the pork chops and vegetables.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the pork is tender.
- If you prefer a thicker sauce, stir in a cornstarch slurry during the last 20–30 minutes of cooking.
- Serve hot with rice, mashed potatoes, or your favorite side dishes.
