Slow Cooker Poor Man French Onion Chicken

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 large red or yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • 1 cup shredded Gruyère or mozzarella cheese
  • Fresh parsley or thyme, for garnish

Instructions;

  1. Prepare the onions: Thinly slice the onions and spread them evenly across the bottom of the slow cooker. Add the minced garlic.
  2. Season the chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper, onion powder, garlic powder, and dried thyme.
  3. Layer the chicken: Arrange the seasoned chicken thighs skin-side up over the onions.
  4. Add the liquid: Pour the beef broth and Worcestershire sauce around the chicken, being careful not to pour directly over the skin.
  5. Add butter and oil: Dot the butter over the onions and drizzle the olive oil over the chicken.
  6. Slow cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the chicken reaches an internal temperature of 165°F (74°C).
  7. Thicken the onion sauce: About 20–30 minutes before serving, mix the cornstarch with cold water until smooth. Stir it into the liquid around the chicken. Cover and continue cooking until the sauce thickens.
  8. Add the cheese: Sprinkle the shredded Gruyère or mozzarella over the chicken. Cover for another 5–10 minutes, or until the cheese is completely melted.
  9. Finish and serve: Garnish with fresh parsley or thyme. Spoon plenty of the rich onion sauce over each chicken thigh before serving.
