Slow Cooker Red Wine Beef Brisket

Ingredients:

  • 3 lbs Beef Brisket
  • 2 Tbsp Olive Oil
  • 4 Carrots peeled and cut into large pieces
  • 1 Red Onion peeled and cut into large pieces
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Dried Thyme
  • 2 tsp minced garlic
  • 1 8 oz. can Tomato Sauce
  • 1 cup Beef Broth
  • 1 cup Red Wine
  • 2 Tbsp Cornstarch
  • 1/2 cup Cold Water

Instructions:

  1. Heat a large skillet over medium heat until the pan is hot. Add in the olive oil. Brown the brisket on both sides cook for approximately 3-5 minutes. ***You can also brown the brisket in your crock pot if you have a sauté setting on your crock pot.
  2. Add the brisket, carrots and onions to the crock pot.
  3. Top with the salt, pepper, thyme and minced garlic.
  4. Then pour the tomato sauce, beef broth and wine on top.
  5. Cover and cook on low for 10 hours or on high for 5 hours.
  6. Remove the brisket, slice or shred.
  7. Remove 2 cups of the liquid from the crock pot and place in a sauce pan.
  8. Whisk in the water and cornstarch mixture in with the beef juice.
  9. Bring to a boil, stirring frequently for 3-5 minutes until it begins to thicken. It will thicken as it cools as well.
  10. Drizzle the gravy over the brisket, carrot and onions.
