Slow Cooker Steak and Cheddar Potato Casserole
Ingredients:
- 1.5 pounds beef steak (such as sirloin or flank), cut into bite-sized pieces
- 4 medium potatoes, peeled and sliced thinly
- 1 medium onion, diced
- 2 cups shredded cheddar cheese
- 1 cup beef broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Ingredients:
– Begin by cutting the steak into bite-sized pieces and seasoning with salt, pepper, thyme, and paprika.
2. Layer the Casserole:
– In the slow cooker, layer half of the sliced potatoes at the bottom.
– Add half of the diced onion and half of the seasoned steak on top of the potatoes.
– Sprinkle with half of the shredded cheddar cheese.
– Repeat the layers with the remaining potatoes, onion, steak, and top with the remaining cheese.
3. Mix the Sauce:
– In a bowl, combine the beef broth, heavy cream, and minced garlic. Stir well to combine.
4. Pour the Sauce:
– Pour the broth and cream mixture evenly over the layered casserole in the slow cooker.
5. Cook the Casserole:
– Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the steak is cooked through.
