Soft & Fluffy Cottage Cheese Garlic Rolls

Ingredients:

  • 1 cup cottage cheese
  • 2 large eggs
  • 1½ cups almond flour
  • 1 cup shredded mozzarella cheese
  • 2 teaspoons baking powder
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • Garlic Butter Topping
  • 1 tablespoon melted butter
  • 1 clove garlic, finely minced
  • 1 tablespoon chopped fresh parsley

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet or muffin pan with parchment paper.
  2. Blend the cottage cheese until mostly smooth.
  3. In a large bowl, combine the cottage cheese, eggs, mozzarella, almond flour, baking powder, garlic powder, Italian seasoning, and salt.
  4. Mix until a thick dough forms. Let the mixture rest for 2–3 minutes to hydrate.
  5. Using a scoop or spoon, divide the dough into 10 equal mounds and place on the prepared baking sheet.
  6. Bake for 18–22 minutes, or until the rolls are puffed and lightly golden.
  7. While the rolls bake, mix the melted butter, garlic, and parsley.
  8. Brush the warm rolls with the garlic butter topping immediately after baking.
  9. Let cool for 5 minutes before serving.

Makes: 10 rolls

Storage:

Store in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 15–20 seconds or warm in the oven at 300°F (150°C) for a few minutes.

Meal Prep Tip:

Bake a batch at the beginning of the week and keep them refrigerated for quick breakfasts, snacks, or easy side dishes. They also freeze well for up to 2 months.
