Soft & Fluffy Cottage Cheese Garlic Rolls
Ingredients:
- 1 cup cottage cheese
- 2 large eggs
- 1½ cups almond flour
- 1 cup shredded mozzarella cheese
- 2 teaspoons baking powder
- 1 teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- Garlic Butter Topping
- 1 tablespoon melted butter
- 1 clove garlic, finely minced
- 1 tablespoon chopped fresh parsley
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet or muffin pan with parchment paper.
- Blend the cottage cheese until mostly smooth.
- In a large bowl, combine the cottage cheese, eggs, mozzarella, almond flour, baking powder, garlic powder, Italian seasoning, and salt.
- Mix until a thick dough forms. Let the mixture rest for 2–3 minutes to hydrate.
- Using a scoop or spoon, divide the dough into 10 equal mounds and place on the prepared baking sheet.
- Bake for 18–22 minutes, or until the rolls are puffed and lightly golden.
- While the rolls bake, mix the melted butter, garlic, and parsley.
- Brush the warm rolls with the garlic butter topping immediately after baking.
- Let cool for 5 minutes before serving.
Makes: 10 rolls
Storage:
Store in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 15–20 seconds or warm in the oven at 300°F (150°C) for a few minutes.

Bake a batch at the beginning of the week and keep them refrigerated for quick breakfasts, snacks, or easy side dishes. They also freeze well for up to 2 months.
