Crispy Mashed Potato Cakes
Ingredients:
- 2 cups mashed potatoes (best if chilled)2 cups mashed potatoes (best if chilled)

- 1/2 cup grated Parmesan cheese½ cup grated Parmesan cheese
- 1/4 cup all-purpose flour¼ cup all-purpose flour
- 2 tablespoons fresh chives, chopped2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped2 tablespoons fresh parsley, chopped
- Salt and pepper to tasteSalt and pepper to taste

- 4 tablespoons olive oil or butter, for frying
Method:
Prepare the Potato Mixture:
- In a large mixing bowl, combine the mashed potatoes, beaten egg, grated Parmesan, flour, chives, and parsley.
- Season with salt and pepper. Mix until all ingredients are well incorporated.
Form the Cakes:
- Divide the potato mixture into equal portions.
- Shape each portion into a round, flat cake. Roll each cake in breadcrumbs to coat evenly.
Fry the Cakes:
- Heat the olive oil or butter in a non-stick frying pan over medium heat.
- Once hot, place the potato cakes in the pan.
- Fry for about 4-5 minutes on each side or until golden brown and crispy.
Serving:
Serve the potato cakes hot, garnished with additional parsley or chives if desired.
