Crock Pot Sausage and Peppers

Ingredients:

  • 2 lbs Italian sausage (mild, sweet, or hot, depending on your preference)
  • 3 bell peppers (use a mix of red, green, and yellow), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 (15 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes (with or without Italian herbs)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional for extra heat)
  • 1 tbsp olive oil (optional, for browning the sausages)

Instructions:

  1. Optional Step: If you prefer your sausages browned, heat a skillet over medium heat, add a tablespoon of olive oil, and brown the sausages on all sides. This step is optional but adds extra flavor.
  2. Layer the Ingredients: In your slow cooker, add half of the sliced peppers and onions. Place the sausages on top of the vegetables, then add the remaining peppers and onions.
  3. Add the Garlic and Seasoning: Sprinkle the minced garlic, Italian seasoning, salt, pepper, and red pepper flakes (if using) over the sausages and vegetables.
  4. Add the Tomatoes: Pour the crushed tomatoes and diced tomatoes (with their juices) over the top of everything in the slow cooker.
  5. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours. The sausages should be fully cooked, and the vegetables should be tender.
  6. Serve: Serve the sausage and peppers on rolls, over pasta, or with a side of rice.
