Crock Pot Sausage and Peppers
Ingredients:
- 2 lbs Italian sausage (mild, sweet, or hot, depending on your preference)
- 3 bell peppers (use a mix of red, green, and yellow), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 (15 oz) can crushed tomatoes
- 1 (15 oz) can diced tomatoes (with or without Italian herbs)
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional for extra heat)
- 1 tbsp olive oil (optional, for browning the sausages)
Instructions:
- Optional Step: If you prefer your sausages browned, heat a skillet over medium heat, add a tablespoon of olive oil, and brown the sausages on all sides. This step is optional but adds extra flavor.
- Layer the Ingredients: In your slow cooker, add half of the sliced peppers and onions. Place the sausages on top of the vegetables, then add the remaining peppers and onions.
- Add the Garlic and Seasoning: Sprinkle the minced garlic, Italian seasoning, salt, pepper, and red pepper flakes (if using) over the sausages and vegetables.
- Add the Tomatoes: Pour the crushed tomatoes and diced tomatoes (with their juices) over the top of everything in the slow cooker.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours. The sausages should be fully cooked, and the vegetables should be tender.
- Serve: Serve the sausage and peppers on rolls, over pasta, or with a side of rice.
