Slow Cooker Roast Potatoes

Growing up, my mom used to make slow cooker roast potatoes every Sunday to go with our roast chicken. It was one of those classic dishes that we looked forward to all week. I remember the aroma of garlic and rosemary filling our home, and the sound of the potatoes sizzling in the slow cooker. The potatoes were always perfectly crispy on the outside and soft on the inside. We would all gather around the table and eagerly await the moment when my mom would serve up the potatoes. It was always a race to see who could get the crispiest one.

Even though I’ve moved away from home, I still make slow cooker roast potatoes regularly. It’s a dish that brings back so many happy memories and reminds me of home. What I love about this recipe is that it’s so simple yet so delicious. You don’t need any fancy ingredients or techniques, just some good quality potatoes and a slow cooker. It’s the perfect side dish for any occasion, whether you’re hosting a dinner party or just having a cozy night in.

One of the things I appreciate most about slow cooker roast potatoes is that they’re so versatile. You can change up the seasonings to suit your taste. For example, you could use thyme instead of rosemary, or add some paprika for a smoky flavor. You could even add some chopped onions or garlic to the slow cooker for some extra flavor. The possibilities are endless.

    1. Maybe you are going to be gone for a couple of hours or perhaps you want oven free for other items. Also, if you live in a hot climate, like I do, it helps to use your crock pot rather than the oven that heats up the whole kitchen. 🙂
